Suddenly, instant coffee was awesome! Thanks to one of the latest coffee trends, everyone is suddenly trying the dalgona coffee recipe. And that’s not so easy.
Of course, I also had to try (I’m a coffee-addicted and I like variety!). Soon I was able to make a beautiful, creamy iced coffee with my own TikTok coffee recipe. And I’d love to share that with you!
Dalgona Coffee: Where Does the Coffee Trend Come From?
The coffee trend started with South Korean actor Jung Il-woo, who ordered whipped coffee in Macau for a TV show. He compared the taste to a Korean honeycomb toffee: dalgona.
The drink then went viralwith the #dalgonacoffeechallenge on South Korea’s YouTube and then TikTok. It is bizarre to think that there was no ‘dalgona coffee’ before January.
So a lot of people think it’s Korean coffee, but it’s not quite that! Jung Il-woo drank the drink in Macau, but apparently dalgona coffee is based on the Indian drink phenti hui coffee (beaten coffee).
Making creamy iced coffee with… instant coffee?
When I saw the trend, I thought, “Weird.” I drink a lot of instant coffee while traveling because it’s easy, but to make something delicious with instant coffee? I never thought of that myself. Obviously, I had clearly never heard of Greek frappés.
I also tried to make the recipe with a good espresso, but that’s impossible – save yourself the trouble!
Isn’t it just a Greek frappé?
I told you, I didn’t know Greek frappés yet. I’ve never been to Greece either. But this coffee trend got some backlash: the Greek frappé has been made with instant coffee, sugar, and water for years.
It’s slightly different though. With a frappé, cold water is usually used and it’s mixed shorter, making it more ‘foam’ than a frothy cream. Then the mixture is poured into a cup of ice first, and then water or milk is added.

How to Make Dalgona Coffee?
If you do it right, it’s really easy. The ratio of instant coffee, sugar, and hot water is 1:1:1. For a large glass, I used 2 tablespoons of all the ingredients. But if you want more whipped coffee, you can easily customize the recipe.
Watch out! Use hot water, with cold water it doesn’t work as well.
Grab a deep bowl and start mixing! You can work with a whisk, but you’ll have to whisk for over 15 minutes. The best and fastest result is achieved with a mixer. Mix for about 4 minutes – or until you have mixed the desired thickness.
As with whipped cream and egg whites: the longer you mix, the thicker the mixture. It also becomes lighter in color.
You can vary with the ratio of instant coffee and sugar, so if you want a little sweeter coffee, throw in an extra scoop of sugar!

Vegan iced coffee
Nice to know: this dalgona coffee recipe can easily be made vegan! Instant coffee is vegan and you can use vegetable milk (make it extra creamy with coconut milk for example!).
Boil water and take a deep bowl (otherwise it will splash).
In the bowl, mix the instant coffee, sugar and hot water with a mixer until frothy. The longer you mix, the thicker it will become (just like whipped cream). With a whisk it takes at least fifteen minutes before you get a thick mixture! You can, but you need a lot of strength and patience.
Fill a glass ¾ with milk and ice cubes. Spoon the whipped instant coffee mixture onto the milk with a spoon.
It tastes best to mix everything well before drinking, also so you can taste if you want to add more sugar.

Do you like strong coffee? Fill your glass with less milk! You can also use an extra scoop instant coffee in the recipe.
Do you like sweet coffee? You can also make the recipe with 3 scoops of sugar.

How to Make Dalgona Coffee. Step 1: To make one drink, combine 2 tablespoons granulated instant coffee, 1/2 tablespoon sugar and 2 tablespoons hot water in a medium bowl. (You can use up to 2 tablespoons sugar for a sweeter drink.) Step 2: Whip, by hand or with a mixer.
The most foolproof ingredient for making dalgona coffee is pure instant coffee powder; using any other type of coffee will probably lead to failure. For instance, 3-in-1 instant coffee contains many different ingredients and additives that will interfere with the air bubble formation.
Who invented Dalgona Coffee? While the sweet street-snack Dalgona originated in Busan in the 1960s, the spike in the coffee drink's popularity is often credited to Korean actor Jung Il-woo, who consumed the drink during a mukbang in Macau on a television program called “Stars' Top Recipe at Fun-Staurant.”
It turns out that instant coffee has a preservative in it called xanthan gum that helps stabilize the coffee when whipped—giving it that airy, frothy texture. This is also the reason why this recipe only works with instant coffee powder, not finely ground espresso or regular coffee.
