The hubs and I have visited Hong Kong 3 times now.

And we loved it.

Especially the food of course!

We have spent numerous hours eating, drinking, talking and watching people in Temple Street, Hong Kong.

During the day there is absolutely nothing to see or to do. But beware when you go there in the evening.

Then the streets are buzzing, tables and chairs on the streets everywhere.

And everyone is eating fantastic looking plates of Chinese food. Not your everyday Chinese restaurant type of dishes though.

Like whole crab with red chili.

Or live seafood and plain and simple grilled fish.

Vegetables in oyster sauce.

And a bunch of these salty soy sauce noodles!

We ate buckets of this stuff already. And still I could not get enough of it. But I am glad that I finally made them at home for the very first time in my own kitchen.

It does save me a plane ticket.

I love how the cooked noodles fully absorb that sweet and salty rich soy sauce, that makes this dish extra savory and packed with flavor!

One remark: you have to use warm noodles for this soy sauce noodles recipe.

Because they will absorb the soy in no time. You will not get the same result if you sprinkle it on top of cold noodles and just give it a stir. That is also why you need to stir fry the cold leftover noodles again if you are using that.

Chinese Soy Sauce Noodles

Easiest noodle recipe ever: stir fried Chinese soy sauce noodles with onion!

Ingredients

  • 9 oz egg noodles (250 g), cooked
  • 1 thick slice onion
  • 1 tbsp dark soy sauce
  • ½ tbsp Shaoxing rice wine (optional)
  • 1 tsp fish sauce
  • 1 tsp oyster sauce
  • 3 tbsp vegetable oil
  • 1 tsp toasted sesame oil
  • caster sugar
  • pepper

Instructions

  1. Pour the sesame oil, soy sauce, fish sauce, oyster sauce and Chinese rice wine (optional) in a small cup. Season with a pinch of pepper and sugar. Stir well and then put it aside until needed later.

  2. Pour the vegetable oil in large wok or non-stick pan and place it over medium heat. Once the oil is hot, add the raw onion.

  3. Stir fry the onion for 5 minutes until it start to soften a little. Don't burn it. Then add the noodles.

  4. Turn the heat high now. Stir fry the onion and noodles over high heat for a couple of minutes until the noodles are hot. Drizzle with the soy sauce mixture.

  5. Stir fry and toss the noodles well until the soy sauce is evenly divided and has colored the noodles.

  2. Pour half of the vegetable oil in the Cook Processor bowl fitted with the StirAssist and close the lid. Select FRY P1 and adjust the time of Step 1 to 4 minutes (instead of 10 minutes). Then press Start to activate the program. Add the cooked egg noodles and adjust the time to 6 minutes (instead of 3 minutes). Press Start to activate Step 2.

  3. Once the noodles are fried, press Cancel to exit the keep warm mode. Transfer the noodles to a plate and cover with tinfoil. Then add the remaining oil to the bowl of the Cook Processor together with the raw onion.

  4. Close the lid and select FRY P1. Press Start to activate Step 1. After that add the fried noodles back to the bowl and drizzle with the soy sauce mixture.

  5. Close the bowl and adjust the cooking time to 6 minutes (instead of 3 minutes). Press Start to activate Step 2. In the end the noodles should be dark brown.

What Is Soy Sauce?

Do you actually know what soy sauce is exactly?

Soy sauce is made from fermented soy beans, wheat flour, water and salt.

It is a popular condiment in Asia and is obtained after several processes in which the soy beans are soaked, heated, roasted, mixed with bacteria or yeast and in the end fermented for months.

This results in a flavorful and strong brownish liquid. Sometimes herbs or sugar is added before bottling. Soy sauce originally comes from China where it was created over more than 2500 years ago.

Chinese

During that time it made its way through the rest of Asia.

Almost every Asian country now has its own soy sauce variation. It is heavily used in Japan, Vietnam, Thailand, Korea and Indonesia.

Soy sauce is obviously a very important condiment in Asian cooking.

It not only flavors food but it can also give it a particular color, like my soy sauce for noodles.

How To Cook With Soy Sauce?

You can use soy sauce hot or cold.

I mainly use soy sauce for beef marinades, Asian soups, stews, soy sauce noodles, tofu and stir fries or as the famous dip for sushi in combination with wasabi to serve with raw fish and rice.

Don’t add too much of it.

Soy sauce is a very salty and powerful seasoning. Check out your recipe to see if you need dark or light soy sauce.

There is a big difference between the two.

Dark & Light

The darker and thicker version is just perfect for marinades (I especially like marinating steaks). This soy sauce coats meat perfectly. It is also the perfect soy sauce for noodles.

Don’t throw the marinade away after using it!

It is a great sauce and can be easily heated separately together with a splash of water or oil. Throw in a handful of fresh herbs in the end and drizzle your dish with it.

First taste before you add it.

I keep the lighter sauce to flavor more subtle Asian dishes like salads or soups for example a Thai kom kha kai.

Salt

It is a bit up to you which one you like the most as well.

Don’t forget that soy sauce is an alternative for salt.

So you don’t need to season your dish with an extra pinch of that or you will end up with something totally inedible. To enjoy soy sauce fully add it in the end of the cooking process (except for stews).

The taste and color tend to disappear sometimes when it is cooked for too long, especially when cooking with light soy sauce.

What To Buy

Or do you have an Asian grocery store near your place?

You might as well take a look at the wider range of soy sauces they offer.

It is definitely cheaper there! Make sure you don’t buy a fake chemical sauce made of water, colorants, sugar or caramel. Carefully read the label first.

If it says ‘naturally brewed’ or ‘superior’, then you are one step closer to a good quality sauce.

Brands like Pearl River Bridge, Saitaku or Kikkoman are safe. Soy sauces are generally sold in sealed glass bottles. Some stores also sell it in bigger bulk containers but that is mainly for restaurants.

Saitaku

If you are a modest user, then you are better off with a small bottle. It is up to you to decide which different kinds of soy sauces you want to keep in your fridge.

If I take a look in my fridge then I see 3 types: Chinese light soy sauce, Chinese dark soy sauce and Japanese tamari. As I don’t have an Asian ‘toko’ nearby I buy all this at my local supermarket.

To give you an idea of the prices: my 5,5 oz (150 g) bottle of Japanese tamari (brand: Saitaku) costs $4,37 (€3,25). The light and dark soy sauces are sold in similar bottles of 236 g with an average price of $1,68 (€1,25).

These are both of my supermarket brand and of superb quality.

You often read or hear you should only use Chinese soy sauce while cooking Chinese or Japanese sauce for Japanese dishes. It is a bit ridiculous to buy all these different types if you don’t cook Asian dishes that often.

I can perfectly live with my 3 bottles of soy sauce.

There is not much more space left in my small fridge anyway. I never had any complaints of people telling me they tasted that I added light Chinese soy sauce to my Thai kom kha kai.

Storage & Shelf Life

How long can you keep soy sauce once you open the bottle?

I would not know that personally, since I very often cook with soy sauce. I go through a bottle in just a matter of weeks. So fast that it never has the time to go bad!

And therefore I decided to do some research on the internet, to see what others say about it.

Well I can tell you that the opinions on how to store and keep soy sauce best are quite mixed.

Quite a few chefs recommend to just keep it in your kitchen cupboard, at room temperature. Others believe that it is better to keep an opened bottle of soy sauce in the fridge.

Fridge or Cupboard?

Where do you store your soy sauce actually?

As far as I have already experienced an unopened glass bottle of any kind of sauce can easily be stored in a dry, dark and cool cupboard or pantry shelf for a long time.

Once that bottle of soy sauce is open, I feel more like keeping soy sauce in the fridge.

Refrigeration helps to keep the flavor and quality characteristics at their best for a longer period. Make sure to close the bottle well. This will extend the shelf life of the sauce.

Taste & Texture

If you store the soy sauce properly, then its taste, color and texture will remain perfectly fine for at least 6 months.

If you suspect that the soy sauce has turned bad, then you better discard it.

Its taste can be bland, flat or unappetizing. Also a change in color tells you enough. Sometimes mold visibly sets in which mainly is a sign the soy sauce is simply too old if you don’t use it frequently.

Before adding soy sauce to your food you should test it first. Pour a few drops on a spoon. If the smell is off already, the get rid of the bottle.

Taste it if you really want to be sure.

Plastic vs. Glass

What brand of soy sauce do you have in your kitchen?

I am sure that you are familiar with quite a few typical Asian soy sauce brands as well.

A couple of imported Asian soy sauces come in plastic bottles. I have no experience concerning their quality but as I browse the internet I mostly read they are OK.

Again, I suggest that you check the label first!

Health Benefits

Salt is recommended in your diet on a daily base but use it wisely.

It is a fact that soy sauce contains large amounts of salt and sodium which are not very healthy if consumed heavily. It can cause high blood pressure and heart attacks. However, don’t let this scare you off.

While cooking with soy sauce you obviously don’t need loads of it to season your food.

In fact, the salty taste of soy sauce is much stronger than regular salt meaning you need less soy sauce ‘salt’ than you would add regular salt to obtain the same taste effect.

Low Sodium Soy Sauce

Most recipes ask for no more than a teaspoon because of its strong taste.

Some manufacturers make low sodium soy sauce.

But the difference in salt is not extremely lower. Some people suffering from diseases like edema, severe heart problems or kidney failure should rather use low sodium soy sauce.

But before you do so get some medical advice first.

However it is not possible to make soy sauce without the use salt since it works as an antimicrobial agent.

Gluten Free?

On the positive side soy sauce contains much more antioxidants than for example red wine which decreases the risk of cardiovascular diseases.

If you suffer from food allergies you better choose an alternative: a traditional Japanese tamari. That is a condiment that looks and tastes quite similar to soy sauce. However it contains fermented soy beans and is less salty.

Most of them are wheat-free. Some are even wheat and gluten free. Before you use tamari carefully read the label.
