Gluten-free puff pastry dough has been incredibly difficult to find, and it’s always contained dairy – something I can’t have. But Schar puff pastry dough is dairy-free and egg-free, and only contains soy as an allergen! As always, check to make sure that this Schar product matches your unique nutritional needs.

I was so excited to finally get my hands on some, thanks to our Anniversary sponsor Schar! Unfortunately, we still don’t have it here it Arizona, but plenty of readers have spotted it in their frozen foods section across the USA!

However, being a celiac forEVER (okay, 10 years) I didn’t even know what to make with puff pastry dough. I hadn’t used gluten-free puff pastry dough since being diagnosed. What was I going to make with it? Of course I went to Pinterest and YouTube to explore. I found this Tasty video and decided to experiment with a few on Schar’s new puff pastry dough.

It’s pretty easy to make these elaborate looking pastries – honestly! Now, gluten-free puff pastry dough is a little more difficult to work with (of course everything is because it doesn’t have gluten’s elasticity), but with a little bowl of water and some patience, you can really nail gluten-free puff pastry recipes! Just make sure you defrost the puff pastry dough for at least 3 hours. Unroll it slowly and carefully and mend any cracks with a little bit of water and your finger. Then, cut the dough using a pizza cutter or knife into squares or the shapes you need for each pastry. Carefully fold the dough, working out any tears with a little water and your finger. Add on the toppings and fillings before you put into the pre-heated oven. Make sure to follow the instructions for baking on the box! Pinwheels like these take a shorter amount of time than more intricate designs – so don’t burn them!

The pinwheel worked best with the puff pastry dough – and really allowed the puffiness in the wheels to shine! It also baked up the best and avoided any soggy bottom that you could get with the more elaborate use of the dough. I used Rigoni di Asiago Nocciolata Dairy Free Organic Hazelnut Spread and organic jam for the fillings. Of course, everything puff pastry is way better with organic powdered sugar on top!

  7. It hasn’t been quite 7 years since I was diagnosed. (It will be 7 years for me in July.) So much has changed though! Even in this short time so many new products have come out. I’m really looking forward to trying the Schar puff pastry dough. Hopefully I can find it near me soon!

  16. This puff pastry does work great, but it is NOT dairy free.
    This post has falsely led to myself and others being sickened by dairy. Please amend your post to reflect that while there are no dairy ingredients added, they are not tested for dairy content.

    1. There is NO dairy in it. Here are the ingredients “Water, Margarine (palm Oil, Water, Sunflower Seeds Oil, Citric Acid, Sodium Citrate, Salt, Artificial Flavor), Corn Starch, Rice Starch, Rice Flour, Chicory Inulin, Dextrose, Modified Cellulose, Soy Protein, Sunflower Seeds Oil, Guar Gum, Iodized Salt, Potato Flakes, Psyllium Seed Husk (vegetable Fiber), Palm Oil, Ammonium Bicarbonate, Natural Flavor.” However, you might have used GeeFree, which definitely uses dairy.

  18. I tried Schär gluten free puff pastry to make pastry cups for fruit cream tarts. Kept the dough in fridge to thaw, used it while still cool, chilled after cutting shapes and before baking. Absolute disaster! The tart shells came out like little flat discs, no rise whatsoever. Will not use again.

    1. Oh no! Please reach out to Schar and get a refund. I haven’t had any issues with mine. Perhaps next time, do a par-bake on the puff pastry before filling?

  19. I have used the dough to make “pigs in a blanket” by just rolling up hotdogs in slices of dough and baking. We have also cut out triangles and put ham & cheese or turkey & cheese in them, roll and bake!

  28. I was at Expo West 2018 (and 2019) and didn’t see this somehow. I am excited to try it for Passover this year. Their store finder (which is by product) says a local grocery chain near me (Sonoma County, Calif) carries it, though I haven’t checked. I am a bit concerned that it keeps saying “lactose-free” and never claims to be vegan. I’m allergic to all traces of dairy. Also that food service case is expensive wow. $15 per box? With 2 little sheets per box? Plus shipping. But still, anything’s better than making it from scratch (I’m no baker).

  29. Very disappointed in this product. The gluten free puff pastry is terrible to work with. It is brittle and just breaks apart as it is being unrolled from the package. At just under $8 per box, it is too expensive to waste but almost impossible to work with.

    1. Eva – I, too, tried the Schar gluten free puff pastry and found it almost impossible to work with. I wanted to make palmieres with it, but it kept breaking into pieces. It was an unmitigated disaster! I’ll try again, but am not impressed.

  32. I wish they packaged this flat. It breaks apart terribly when unrolling. I am patient and light of touch. This is a disaster. Schar! Package it flat or in 9 square pieces. I feel I bought a jog saw puzzle!

    This is absolutely horrible and frustrating to work with.
    I was so excited to find this at Safeway in Bellingham as there is none to be found in Vancouver BC. Am so disappointed 😟

  38. In order to purchase this I had to buy an entire case. So far, after 2 boxes, I cannot get the pastry to unroll without cracking. It is also impossible to get it to shape without completely crumbling. I’ve read the comments on “re rolling” and totally do not understand how that could possibly help. Can someone tell me how to do it and why it works. Or alternatively tell me what you do to get this product to roll out so you can actually make something with it.

    1. I actually re-roll it and it doesn’t crack! I honestly think it would be better if it wasn’t packaged as a roll! But it still bakes like a puff pastry after re-folding and re-rolling out.
