There’s just something about food you can eat with your hands that says “party” to me. And these Salmon and Black Bean Nachos are super festive and soooooo flavourful. Plus, they are packed with good-for-you nutrients and tons of protein. A meal that is fun, satisfying and totally fuss-free? Now that’s cause for a celebration!

The mini chefs enjoy helping me in the kitchen, but they really love when they can make the entire meal themselves. Luckily, this recipe for Salmon Black Bean Nachos is an easy to assemble, sheet pan meal that requires minimal adult supervision.

Yeap, the kiddoes can easily load up the sheet pan with tortilla chips, shredded cheese, black beans, corn, and salsa. Adding in salmon could not be easier.

  1. Preheat the oven to fan assisted 440F / 180C / 200C / gas 6.
  2. Lightly spray a sheet pan with low-caloriecooking spray.
  3. Spread the tortilla chips on the baking sheet so they form an even flat layer.
  4. Top the chips with flaked salmon, salsa, tomatoes, sweet corn, black beans, jalapeños and cheese.
  5. Bake for 7-8 mins, or until the cheese is nice and bubbly.
  6. Remove the nachos from the oven and finish with chopped coriander, sour cream, spring onions and black pepper.

  • Spread the tortilla chips out in a single layer to ensure each each one is coated with delicious toppings.
  • For those who like some heat, you can make these into spicy black bean nachos by adding ground cayenne or chipotle pepper.
  • For a different flavour profile, feel free to change up the ingredients. Try using shredded Monterey Jack cheese, or top with pico de gallo or mango salsa.

  • 8 oz (225g) cooked and ready to eat salmon flakes
  • 10 0z (300g ) tortilla chips
  • 3 tbsp tomato salsa
  • 10 cherry tomatoes halved
  • 14 oz (400) black beans drained and rinsed
  • 1/2 cup (64g) sweet corn drained and rinsed
  • 1.5 cups (190g) cheddar and mozzarella cheese shredded

Toppings:

  • coriander (cilantro), chopped
  • sour cream
  • green onions (green onions), sliced
  • black pepper to taste
