Weight Watchers Taco Casserole Recipe
This Weight Watchers Taco Casserole Recipe is a variation of my favorite Weight Watchers friendly Taco Casserole (made with chicken).
I like making casseroles all the time, but especially for family dinners, holidays and even events like the Super Bowl. They are just easy and always taste great and this one, at just one WW point, is a GREAT one.
If you love taco dishes, try my Weight Watchers Friendly Taco Dip and Zero Point Chicken Taco Soup, too!
With Weight Watchers, you can eat anything in moderation. I’m constantly swapping ingredients to make things more flavorful with less points. For example, I swap out plain, non fat Greek yogurt for sour cream or ground beef for ground turkey, things like that.
I like to keep things interesting! And, as I find new WW friendly ingredients in the stores, or hear about something in my WW group, I like to add them into my existing recipes to grind down the points – whenever possible. If you are on Weight Watcher’s, you already know what I mean. :)
To Use Canned Or Fresh, That Is The Question
When cooking with processed ingredients like taco sauce, pasta sauce, etc, you can easily sub those out for fresh seasonings and vegetables to reduce the point count. If you’re not following Weight Watchers, feel free to add in some tortillas (this casserole would be amazing wrapped up in a tortilla… omg) or even put some chips on top!
Make sure you try my Homemade SALT-FREE taco seasoning with this recipe! It has every bit as much flavor and it is heart healthy!

How many does this serve and how much on WW can we have? Doesn’t tell us. Thank you

The directions say it makes 6 servings and the points are listed next to it for the various WW programs. :). So you can eat 1/6 of it.

I really need to know what size casserole dish . That makes a huge difference in points . Also for those asking it says 8 servings is 11 smart points and 6 servings is 6 smart points. BUT if you don’t have the casserole size dish it won’t be correct …
Reply
SlapDashMom
The recipe itself doesn’t change no matter what size the casserole dish is, so it’s not that important. :) However, a 2qt dish works just as well as a 9×9 square dish would work. Here’s the one I use: http://amzn.to/2k4fUNc

What size casserole????? Reminds me of the joke……. Oh cut my pizza in 6 pieces, I could never eat 12! People: just take the total amount of casserole and divide it in to either 8 portions or 6 portions for servings!

This question has been asked several times but I linked to the exact dish I use here: http://amzn.to/2zh2otu :)

You can just skip the sour cream or replace it with salsa maybe? I have the “eat it or starve” philosophy in my house so I can’t be sure.

Delicious! I bake mine in a 9×13 pan and I cook 16 oz boneless, skinless chicken breasts and shred it. We like it better than the grd meat. I also add an extra can of beans & cut it into 8 servings.

This was so easy and delicious. I did add about half a cup salsa and 3 TBS Taco Seasoning. I still felt it needed more seasoning. Next time I would add green chili’s. I used a Mexicali sour cream dip in lieu of the sour cream which increased the points (Itrackbites) for me to 3. Still a low point meal!

Sounds great !!! I am going to try a serving over romaine lettuce for a taco salad and also thought it would be good over cauliflower rice.
