  • Almond Flour Pasta. One of the recipes I’m most proud of on LPLC! Legit pasta NOODLES! I’ll show you how to make 6 different shapes.
  • Cabbage Lasagna. Same as the zucchini noodles, but even EASIER to make!
  • Keto Gnocchi. Same almond flour pasta base, just in gnocchi form. Delish!

Tips for Making Your Own:

If you’re feeling a DIY pasta night, here are a few tips and tricks to make your life easier:

  1. Spiralized veggies make an awesome pasta sub. Nowadays you can usually buy these pre-spiralized at the store!
  2. Shirataki (“miracle”) noodles are hit or miss – Some people love them, while others can’t stand the taste/texture. You decide.
  3. Storebought pasta sauce is usually loaded with carbs. If you want to buy a pre-made jar, check for one with no added sugar.

Who doesn’t love meatballs? They’re so savory and delicious – they just may be one of the most satisfying low carb dinners of all! Making low carb meatballs isn’t as tedious as it sounds and they’re great for meal prep, so you only need to do it once in a while.

Living a carb-conscious lifestyle doesn’t have to mean that pizza is taboo, and I’ve got all the tasty recipes to prove it!

  • Keto Pizza Crust. This recipe has been perfected after years and years of pizza making! Best news is? Only 4 ingredients!
  • Meatzza. Pizza made from ground turkey or beef — it’s genius!
  • Fathead Pizza. Popular pizza alternative in the carb-conscious community made from cream cheese and mozzarella.

Ingredients

Chicken + Marinade:

  • 1 Cup Greek Yogurt I use fa*ge 2%
  • 2 Cloves Garlic finely grated
  • 1 Tablespoon Fresh Ginger grated
  • 1 Tablespoon Garam Masala
  • 1 Tablespoon Kosher Salt
  • 2 pounds Chicken Thighs boneless + skinless, cut into 1" cubes (note 1)

Sauce:

  • 2 Tablespoons Butter
  • 2 Tablespoons Garam Marsala
  • 1 Cup Tomato Puree
  • 1 Teaspoon Kosher Salt
  • 1 Cup Heavy cream (note 2)

Serving:

  • 1/4 Cup Fresh Cilantro chopped
  • Cauliflower rice

US Customary - Metric

Instructions

  • Add yogurt, garlic, ginger, garam masala, and salt to a large resealable bag. Seal and massage to combine. Add chicken and toss until chicken is evenly coated in the marinade. Place in the fridge for 3 hours - overnight.

  • Move the top oven rack so it's 10" from the bottom of your broiler. Turn the oven to broil and line a baking sheet with foil. Place chicken on the prepared sheet in a single layer. Broil for 9-11 minutes, and rotate halfway through. Remove the chicken from the oven once there are black spots on top. Note: it won't be cooked fully through.

  • Meanwhile, melt butter in a large pot over medium heat. Once melted, add the garam masala and toast until fragrant - about 1-2 minutes. Add all other sauce ingredients, along with the chicken and any juices that have accumulated on the plate, to the sauce. Make sure to fully submerge the chicken in the sauce, and bring to a simmer. Continue to cook until the chicken reaches an internal temp of 165 F, this should be about 10 minutes.

  • Serve with chopped cilantro on top, over a bed of cauliflower rice. Enjoy!

      Hi Carol! Thank you so much for your kind words! Ahhh, working on it. This one is taking me a WHILE! Unfortunately, my almond flour pasta wasn’t strong enough to pass through a pasta machine. But, I’ve been testing other ingredients and ratios, and hope to have something soon! For now, my top spaghetti swaps are Edamame pasta and spaghetti squash.
