You know that saying “the way to a man’s heart is through his stomach”? I totally take advantage of that ALL OF THE TIME. I’m a people pleaser (which has its drawbacks) but generally means, when my people are happy, I’m happy. So, when my person, J, is happy, I’m REALLY happy.

I think I’m going to need to include another tab in my menu titled J’s favorites. Not that everything here isn’t approved by him, but naturally, he has his favorites. And this Cowboy Lasagna is one of them. It feels a little bit appropriate to be writing about one of his favorites, because roughly two yeas ago today, my mom was writing my online dating profile. Yes, you just read that correctly. MY MOTHER MADE ME AN ONLINE DATING PROFILE.

Two years ago, I was kind of at a stalemate. I wasn’t loving where I was living, I certainly wasn’t loving any of the eligible bachelors in my area, but deep down, I was kind of ready to enter back into the dating scene. My mom (she’s a cool mom) realized this and convinced me to let her create an online dating profile for me. I gave her a week. She only needed two days.

Two days into my online dating adventure I received a refreshingly normal note from THA CUTEST GUY EVAA – “hey, how are you”. We proceeded to dive into conversation where J continued to jokingly “propose” to me over the ap’s messenger when he found out I was 5’9″. He’s a solid 6’3″ so apparently, height was important. I kid you not. True story.

Fast forward two weeks and he was taking me to dinner, and two years later I’m still stealing food off his plate and talking his ear off at the dinner table. Life is grand, isn’t it?

OK, I’m done telling you the details of my love life, and I’m proceeding to tell you about this totally awesome taco, southwestern, lasagna mashup.

Let’s get to it!

WHAT YOU’LL NEED (increments below in the printout):

Ground beef (or turkey for a lighter option)

Onion

Red pepper

Olive oil

Russet potatoes

A jar of your favorite all naturalsalsa

Chili powder

Garlic powder

Chipotle powder

Cayenne powder (optional)

Optional – Shredded pepper jack cheese (you can use dairy-free if you prefer!)

WHAT YOU’LL DO:

Preheat your oven to 375 degrees. Heat a large frying pan over medium-highheat with olive oil. Dice the onions and peppers and add them to the hot pan. Cook the onions and peppers for 3-5 minutes, or until they soften and the onions turn translucent. Add the meat and spices to the pan. Cook for an additional 5-8 minutes until meat is cooked through.

Meanwhile, scrub, dry and slice the potatoes into thin rounds. They shouldbe about 1/16-1/8 inch thick. Lay 1 layer of them down in a casserole dish, mine is roughly a 10×13 inch oval dish. When the meat and veggie mixture is cooked, layer 1/3 of the mix into the dish and cover the potatoes. Cover with 1/3 of the jar of salsa. Repeat this process twice more and place the “lasagna” into the oven for 45 minutes. Remove, sprinkle with the cheese, and place back into the oven for an additional 10 minutes, or until the cheese is melted and the potatoes are soft. Let cool, slice and dig in!
